The smell of mint immediately takes me to a warm summers day, fresh mint is the herb of the summer for me and I use it a lot. I have managed to narrow my use of fresh mint to down to 3 ways, which I hope you will enjoy. I have also included a Mojito Mocktail Recipe.
3 Ways to Enjoy Fresh Mint This Summer: Including an Easy Mojito Mocktail Recipe
Here I will be sharing 3 of my favourite ways to use fresh mint this summer: Mojito Mocktail, Tabbouleh, Popsicles.
How to Make a Mojito Mocktail.
Crushed ice – pre-brought or whizz in a nurtribullet/blender (ideally a good handful per serving)
3 fresh limes
1 tsp demerara sugar
Approximately 10-12 mint fresh leaves
Lime juice or cordial
Lemonade or soda water
Using a pestle and mortar (or improvise), crush the sugar and fresh mint leaves together (keep back a couple of leaves for garnish)
Place a good size handful of crushed ice into each glass/tumbler
Juice 3 limes and equally serve between the glasses. Keep some lime back for garnish.
Top tip: Use left-over lime or lemon to wash your hands with after handling smelly foods.
For an extra lime, taste add a splash of lime juice or cordial to the mix.
Then top up the glass with lemonade or soda.
Garnish with a left-over lime and mint and add decorations like a party straw.
Sit back, drink and enjoy!
Recently I shared my recipe for Tabbouleh, a dish I have been eating since I could eat – my family are Lebanese. Serving suggestions are endless but a firm favourite of mine is classic hummus and pitta and it goes down a treat in our house. Top tip for this recipe is to use a lot of fresh parsley and fresh mint.
I ordered these reusable BPA free popsicle moulds and have come up with some recipes for both myself and the girls. Using lots of fresh fruit, cordials, edible flowers and sodas. The grown-up ones contain the likes of Gin & Tonic and Prosecco options. YUM! I used the mock mojito recipe and made popsicles and added some extra fresh mint – super scrummy.
