This Mediterranean vegetables with Freekah is a firm family favourite dish in our household. It goes well with an array of other wonderful dishes too. My mum has served this for years and I will never tire of it. Full of colour, flavour and tastes amazing. It is also super easy to create, making it an easy meal to prepare for the family that you can eat hot or cold.
Mediterranean Vegetables with Freekah
This recipe serves 2-4
You Will Need:
1 x Courgette
1 x Red Onion
1 x Aubergine
1 x Red Pepper
1 x Bulb of Garlic
Salt and Pepper
Simply double up on ingredients if you wish to make more.
How To Create:
Pre-heat oven to 180º
Cut all veg into large chunks and add to a large mixing bowl
Add each clove from the bulb of garlic to bowl, leaving the skins on
Generously drizzle the vegetables and garlic with the rapeseed oil
Season with salt, pepper and spice up with paprika to preferred taste
Transfer contents of bowl to a large baking tray and put in the pre-heated oven to cook for around 30 minutes. (keep hold of bowl – you will need this to mix all the ingredients together)
Whilst the vegetable are cooking, prepare the Freekah according to the manufacture guides. Some just need soaking whilst others need cooking.
Once all the ingredients are ready, transfer all the ingredients back to the large bowl and mix well.
Serve on its own or add another dish like chickpea and aubergine casserole. I personally like to eat this with pan cooked marinated tofu and olives and have this as a side salad for lunch. You can be as creative as you want with this.
