Simple and Tasty Tabbouleh Recipe: A Perfect Vegan Salad

With the warmer months approaching, salads are a real winner for a side dish and as this is a traditional dish in our family – I simply had to share it. A tasty, refreshing and healthy dish which I can’t get enough of and my kids love it too. It’s also really simple to make and needs a minimal amount of ingredients. It’s a perfect vegan salad.

Simple and Tasty Tabbouleh Recipe

The ingredients for this recipe can be sourced from most shops and as I mentioned, really easy to make. My top tip for this dish is to make sure there are more parsley and mint than bulgur wheat.


1/3 cup of Bulgur wheat
Juice of 2 lemons
3 large bunches of fresh parsley
1/4 cup of fresh mint
3 large tomatoes – dice small
Salt and pepper to taste
2/3 tablespoons of olive oil
Leaves of Gem lettuce to serve


  • Whilst soaking the bulgur wheat, prepare all the other ingredients – allow at least 30 minutes for soaking and taste the bulgar to make sure it’s softened before draining.
  • Remove the stems of the parsley and chop. I use my Nutribullet to chop my herbs.
  • Drain the bulgur wheat well, add the chopped parsley and mint. Then add the lemon juice, salt and pepper, diced tomatoes and olive oil.
  • You can add spring onions to this recipe if you wish and there should always be more green than anything else!

    Tabbouleh is one of our summer favourites that I make in bulk to put in the fridge for the weekends.I think it was the first recipe that introduced us to bulgur wheat.
